Easy and super tasty lentil soup

This is my favorite lentil soup inspired by an amazing woman who is watching over us from the stars above . She was by my side during a difficult time in my life and we spent our time together laughing, exercising and talking about food. I always left her house with lunch in my hand and a smile on my face.



This soup recipe is ultra tasty, super nutritious and very easy to make. A wonderful, quick- to-put-together hearty soup. Cilantro is optional but really makes a difference, taking it to another level of blending flavours.


Buckwheat is also optional but I added it the other day and it was lovely. I always like to add a little of this or that which I may have in my cupboard to add a little more nutrients to the dish.


Lentil Soup Recipe (4 servings)


Ingredients


1 L bone broth (home made is best :))

1 tsp salt

olive oil

1-2 small onions

1/4 cup chopped ginger

1 large clove of garlic (local if possible)

turmeric

garam masala

3 small hot chili peppers (or chili flakes)

1-2 cups tomato puree

2/3 cups red lentils

2/3 cups buckwheat

fresh cilantro


How to:


Simmer gently chicken carcass in 5-6 cups water and a little salt for 1-2 hours (this will reduce, make sure the heat is not so high that it reduces too much) We want to end up with about 1L of broth


Add 2-3 tbsp olive oil to a pan and sauté the following:


1-2 onions

1 tsp turmeric

1 tsp garam masala


Note: a bit of water can be added to help the spices open up


Then add:


1 large clove of chopped garlic 

1/4 cup chopped ginger

1/2 tsp chili flakes


Sauté another 5 minutes (ish)

Add all of the sauteed ingredients to the broth


And then, add the following


1 -2 cups of tomato puree

2/3 cup rinsed red lentils

2/3 cup rinsed buckwheat (optional)


Simmer 45 mins

Garnish with fresh cilantro
